Thai Wraps - the easy way

My house is a little dusty..with some small construction work. Cleaning up all that dust does not make me want to spend too much time in the kitchen, but I like to have tasty food. So here goes a quick don't want to cook night recipe (I use the term recipe very loosely here..)



Lettuce to wrap stuff in
Stuff to put in the lettuce
I used red pepper, tomato, shredded carrot
and the Perdue Short Cuts...they are gluten free (yay!!)
And the best ingredient... Thai Kitchen Peanut Satay Sauce... so good, it is great on chicken as a sandwich spread..frankly it rocks.

Put all ingredients in lettuce..smother with sauce, and eat.

I love green wraps and greenwiches! In fact, I bought some organic red butter lettuce today - for this very purpose.

I was a healthy eater before becoming gluten free..but I never ate a burger or any sandwich on lettuce until I ate gluten free. And I love it. It's pretty wild how used to it you can get.

Heyyyy- I didn't know Thai kitchen Peanut Satay was gluten free- I always make my own! Way cool, I'll have to pick some up. Looks like a tasty meal!
I do like my sandwiches on homemade GF bread- but lettuce wraps are fun too.

Sea - Isn't that funny? I find out some products are gluten free and I get so excited. I was pumped when I found this...esp. since I lent out my Thai cookbook, and I don't remember who has it!! :)

By the way..do you know of a gluten free hoisin sauce?? I have been searching everywhere....

MMMM!!!!! Sounds good! I love using lettuce as a "wrap". I eat all my sandwiches that way now. This looks like a yummy dinner :D

Gluten Free Hoisin.. Yup. Premier Japan Organic has a wheat free hoisin sauce. You can find it at www.edwardsandsons.com
