Weekly Menu #9

Ok, I don't feel much like cooking this week. Or planning. Blah. Ever feel that way? But, it is a job that needs to be done, so here goes a menu plan, trying to make it easy, for this week.

My Weekly Menu #8

Monday: Rustic Chicken Soup from Gluten Free Goddess
(I meant to make this last week, but ended up with enough leftovers to take a break! yay!)

Tuesday: steak fajitas with sliced avocado with lemon

Wednesday: Roasted Chicken with steamed broccoli and curry sweet potatoes

Thursday: easy night (leftovers, sandwiches, breakfast, etc.)

Friday: Pizza night (I know that I am always having this here, I am trying to perfect a recipe for a thick whole grain Pizzeria Uno-type pizza crust. I am almost there...)

Saturday: (Hoping for date night, kids eating babysitter food, keep fingers crossed for me!!)

Sunday: Roast beef with roasted potatoes and whatever vegetable looks great
(I know I do roast beef a lot, but hey, it's my favorite dinner and I am the one cooking so.. :grin: I get to have it for dinner. There are some benefits to being the cook of the house!!)

I just posted a recipe for Teff Peanut Butter cookies you might enjoy. It is mostly the recipe from the Teff flour package, but I altered it a little; of course! :-)

I always enjoy your menus. Need that pizza dough recipe when you get it figured out!

SM -- I used your Roast Beef with Mustard Paste recipe tonight for my beef roast! It's not even halfway done cooking yet and I can tell you it's the best smelling piece of meat I've ever roasted in this house!! I can't wait to try it with the homemade stuffing I made tonight (a trial run for Thanksgiving!) Yummm!!! Thanks for the great Roast beef with mustard paste recipe! I had no idea the aroma was going to be so tantalizing!! I'm sure it will taste even better!

And, that pizza dough is coming along...I think just a few more improvements. :)

Carrie - It does smell divine doesn't it??? I am so glad you are enjoying it, and I hope it tastes as good as it smells!!! :)

It's so much fun reading these menus. it seems to spur creative cooking thinking =)

Do you use corn tortillas for your fajitas, or is their some great gluten free flour tortilla that I haven't heard about?

Mary - I love Food for Life Brown flour Tortillas. warmed up I think they are just like 'regular' ones. You have to try them.
