Banana-Quinoa Muffins - Quick and Easy


I saw a recipe in Health Magazine for Banana Oat muffins, and decided to alter it to make it gluten free. These are yummy and easy to make, and a pretty good breakfast on the go too.

We had them this morning warm with cappuccino...yum!

(I am also thinking these would be great with applesauce and chopped apple substituted for the banana...)


Banana-Quinoa Muffin

2 mashed ripe bananas
2 tablespoons grapeseed or canola oil
1 egg
1/2 cup fat free milk
3/4 teaspoon vanilla extract
2/3 cup brown rice flour
1/2 cup quinoa flakes
1/3 cup sugar
1 3/4 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
dash nutmeg (optional)
1/2 cup chopped pecans/walnuts (optional)

Preheat oven to 375. Combine bananas with wet ingredients, mix well. Mix dry ingredients in another bowl. Combine mixtures until combined, don't stir too much! Grease or put muffin liners in pan, spoon batter evenly into 12 cups. Bake about 16 minutes, or until knife inserted in center comes out clean.

Enjoy.

These I will definitely have to try! Where do you get Quinoa FLAKES? Is it Nature's Path that makes them? I know I've seen them! These just look yum yum yum.

I love the flavor of bananas and quinoa. This is a nice recipe for using the box of quinoa flakes I have in my pantry. Thanks for sharing.

Kbabe - I got my flakes at the health food store..they are Ancient Harvest Quinoa Flakes. They are my new thing..I really like them for baking.

THANKS! I'm going to go looking for them. I like the straight quinoa, i think (LOL :D). I'd be curious to see the flakes. Can you eat them as a cereal too? Hot or cold?

I'm a japanese and live in Japan.
We can't find Quinoa Flakes.We just can get whole guinoa.

Yet this recipe sounds so teasty!

Is there a way to make this kind of quinoa muffin with Whole Quinoa
instead of Quinoa flakes?

We cannnot get quinoa flours neither.

Erica..honestly, I don't know. Could you grind your own quinoa and try that? I used the flakes to substitute for oatmeal, so any quick cooking flaky thing might work, and you may have something interesting...

Kbabe - yes, it's a lot like instant oatmeal. :)

Currently, I do not cook with milk or egg substitutes, so I really don't know what would work.

I made these this morning, substituted applesauce for the egg,almond milk for the milk, almond meal for the sugar, and added 1 c. blueberries, thereby accommodating everyone's needs in the family. They were the first muffins the ENTIRE family (GF and non-GF alike) LOVED! Thanks so much. What a wonderful site. I'd never thought to use quinoa flakes before. They are great. -- Paula in IL

Yummy, yummy! My 3 kids are sitting down eating a muffin and a yogurt each, after enjoying your recipe for shrimp and scallops with basil and broccoli and basil for supper. I am new to the whole 'gluten free thing' and your site has been the best so far for figuring out how to feed my 10 year old son who has Asperger's. We're trying a gluten free approach as per the advice of our naturopath. Thanks for your help!
