Corn Muffin

I just wanted something simple and yummy, so I decided to try and make my own corn muffins. Next time I am going to try it with brown rice flour and see how it works, this time I didn't want to try, I just wanted to eat. :) They were delicious. Wonderful with butter and honey. And, a nice cappuccino.

Corn muffins

1 1/2 cups corn meal
3/4 cups Pamela's all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
small handful flax seed (optional)
1 cup milk
2 eggs
3 tablespoons butter, melted

Preheat oven to 400. Line muffin tins with paper liners, or grease well. Mix dry ingredients in bowl. Whisk together wet ingredients. Add wet to dry, mixing until just combined. Don't over mix. Divide batter evenly in muffin tins (makes twelve regular). Bake 18-22 minutes, until lightly browned and toothpick comes out clean.

HEy there! Corn muffins! So funny we were on the same wave length! I will try your recipe next time...they sound good too. Like the addition of flax - add some extra fiber. :D

One guy came thru BRIEFLY today...hubby's taking him up to northern NJ for a few days, then he comes back to stay on Thursday until Sunday. THEN...tomorrow, someones coming - but they leave Thursday a.m. before the other guy comes back! Did you follow that??? Even I'm confused and it's MY house. LOL :D

I got my crockpot ready, and all the ingredients except the shallot (gotta check another store - the one I went to yesterday was lame-o and didn't have one). MMMMMM....I cannot wait....been dreaming about it even.

It gave me a thought too...thinking I might (after I try successfully the way it's supposed to be done) make a Quinoasoto (you know, risotto, but use Quinoa instead! LOL :D)

Well...I gotta go, the kids are killing each other! PLEASE COME SOON BEDTIME! :D

The corn muffins look fabulous. All your talk of coffee makes me envious. I sneak an occasional cup because it is my second pregnancy...haha

The risotto is in the crockpot. Can I tell you how good my house smells right now? I was going to burn a good smelly candle to get the winter stink outta the house - no need now! MMMMM...I can't wait until dinner! :D

Natalie-I snuck a little coffee on my second one too. It's such a treat. Soon..you can have some coffee without guilt!

Kbabe - Yeah..that smell!!! I forgot..I was going nuts myself. How did it turn out? And lately..I too have been needing bedtime to come quickly..one of those weeks!!! :)

Hi there....I made the risotto last night. The TASTE was amazing...but realized after the fact that I used a long grain rice so it turned out quite mushy. I also didn't "brown" the rice enough, I think.

AND I forgot to add the parmesan cheese! WHAT A GOOF!!! Oh well. I LOVED IT! It made so much that I froze a bunch of individual portions for quickie meals for me.

USER ERROR, not recipe error!

My husband and company loved it too - my kids were a little more hesitant. The baby ate hers and begged for more...my older two snubbed it.

I believe that next time I'll try the more traditional method in your Shrimp/Risotto recipe AND I'll get the right rice AND I won't forget the parmesan.

You still deserve a kiss and an I love you for sure.

Hey, you never know..all those "wrong" ingredients may have made something completely new and amazing.

Try the crockpot again after you make it traditionally, using the right ingredients. I am glad that it came out good enough for you to enjoy it!

Reply OH YEAH TOTALLY!!! It tasted just phenomenal! As a matter of fact, with some of the left overs I'm planning on making fried rice balls. You use a cookie scoop and roll them in gluten free bread crumbs, then fry them. I'm thinking I might post the recipe to fry them on my blog. I'm going to add in the missing parma and maybe add some mozz to it too. :)

This is totally unrelated to corn muffins ... sorry ... I've been gluten free for a number of years but food blogs are new to me and I'm still learning my way around. It's been amazing to find so many others who are leading the way for those of us who are "still learning."

I'm am looking for help using Italian chestnut flour and buckwheat flour in gluten free baking. Any suggestions?

Still Learning- Thank you for commenting. Unfortunately, I don't have any advice for you since I have not gotten into those flours myself yet! I highly recommend doing a search on some of these blogs. In the upper corner you will see on the blogger bar a search option. Type the word in and if there is a recipe for buckwheat flour it will show. Good luck, and thanks for stopping by! :)
