I have not been feeling at my best lately, I actually think I am in a great healing phase; I have been gluten free for almost 8 months. So, I am eating things that are easy to digest for a bit, and no meat. ( A huge sacrifice on my part, but it's only for a couple of weeks. ;) And when I have been feeling well, we have been gardening like crazy..my herb garden is almost all planted, so fresh herbs are coming my way.
So, another night I just want something fast and tasty, and I don't want to cook. Surprise. :grin:
Just another reminder: make sure your soy sauce is gluten free. I use San J, but I believe that LaChoy is gluten free as well.
So, here is a way to turn this:
Into this:
Stir Fried Rice and Veggies
minced garlic
minced ginger
soy sauce
sherry (optional)
sesame seed oil
whatever vegetables you have on hand - chopped somewhat small, they will cook faster that way.
(I used carrot, red pepper, onion, sugar snap peas, green onion)
Cook rice. Prepare veggies. Heat oil in wok or skillet. Add ginger and garlic. Cook about 30 seconds, add vegetable that takes longest to cook, cook a couple of minutes, then add the next, and so forth. Add cooked rice. Add soy sauce, sherry, sesame oil and mix.
Eat.

Hi! I just stumbled on your recipe, and felt compelled to note that you must be careful what sort of soy sauce you're using in your recipes if you want to be gluten free. Most soy sauces contain wheat!
The stir-fry looks delicious!

Sorry to hear you are not feeling well! That is too bad. I am supposed to be eating MORE red meat because my iron has gone from great to not so great- my babies will be sixteen months apart, so it figures. I am sipping juice laced with liquid iron supplement right now, sound delicious?
Oh, by the way, what is your plan about labeling things like soy sauce? I was thinking about writing a disclaimer because every product needs its label checked- but then again, some things are trickier than others...This comment is so long I should have emailed you! Sorry..=)

I use Bragg's Liquid Amino Acids in place of soy sauce -- it is only ever made from soybeans and water. They don't even add salt, as the fermented soybeans are naturally salty. And I love it! Tastes just like regular soy sauce.
