Vegetarian Chili - Dairy, Meat, & Gluten Free



I used to make a vegetarian chili quite often before I went gluten free, and used bulgar wheat in it. I just forgot about it until today, and then thought, "Duh! I can use quinoa!" And it came out perfectly,and maybe even better.

A half an hour later, my family was sitting down and eating. The children had been called in from outside, their cheeks rosy from the cold, and chatting all about the new snow fort they had created outside. My daughter, who usually shies away from the soup/stew/chili kind of food polished off her warm steaming bowl in record time. One thing she loved was being able to put toppings on...cheese, pico de gallo, avocado, green onion, sour cream...whatever you have on hand. This meal will definitely be repeated!



Vegetarian Chili - Dairy, Meat, & Gluten Free

1 can black beans, liquid as well

1 can red kidney beans, liquid as well
2 14.5 oz cans diced fire roasted tomatoes
1 medium diced onion

3 carrots, chopped

1 pepper, chopped

1/2 cup quinoa

olive oil

to taste - cumin, chili powder (I like ancho), salt, pepper, oregano

Put sauce pan over medium heat. Add a drizzle of olive oil. Put carrots and onions in pan for about 5 minutes and stir occasionally. Add quinoa, stir. Sprinkle on spices to taste, stir and cook a few minutes more. Add 2 cans of tomatoes, and add 2 more cans water or broth. Cover and simmer for 15 minutes. Add the two cans of beans with the liquid, and chopped pepper. Cook until everything is hot. Serve with whatever toppings you like. We did pico de gallo, guacamole, and green onion.

hmmm...I wonder if I have any quinoa hiding in the cupboard. We're supposed to get snow this weekend (it's been 15 years since we had a true snowstorm)and chili sounds lovely.

what a wonderful idea Ms. GF!!! I just made chili last week as well! We love chili in cold weather!! I haven't made a truly vegetarian chili in ages. That will be perfect for our diet in the next two weeks! I can't wait to try this with quinoa!

Mary Frances - Did you get the snow? Here in New England we are gettinga winter from my childhood. We have had several storms and almost all of them have dumped at least a foot of snow on us. Fun weather!

Carrie - As you know I have been absent from the blogger world for a bit, (I am back now.)so I did not know you were altering your diet. I hope it's going well! I am doing a two week trial myself, no dairy and cutting back significantly on my meat consumption. I am just finishing my first week. :)Good luck with yours!

SM -- It's tough cuz I LOVE meat... but in the past year or so, red meats seems to REALLY upset my stomach. chicken doesn't, so we still eat a lot of that and turkey... but it's tough because when i was growing up my dad used to grill sirloin steaks every week. (and I wonder why I have a weight problem? LOL) but I LOVE red meats like that, and we always had leg of lamb at christmas and I made it this christmas to try it again and once more it really just upset my stomach terribly... So I think I'm just going to have to resign myself to the fact my body doesn't like red meats... what a pity! I will miss that more than gluten!!! I hope your diet goes well too! We'll be doing no meats at all starting this week (I think! I'm having trouble keeping up myself!) ;-)
