Easy Basic Muffin recipe

Got this from from user run_4_jesus

2 tbsp. shortening
1/4 cup sugar
2 eggs
1 cup white or brown rice flour
2 tsps. baking powder
1/4 tsp. salt
1/2 cup milk
1/4 tsp. vanilla extract

Mix the shortening and sugar. Then mix the eggs. Then throw in the flour, baking powder, and salt and mix. Then mix in the milk. Then mix in the vanilla extract.
Bake for about 20 minutes in a 350 degree oven.

We're doing the nasty wf/gf/dairy free diet. My oldest really misses bread--I'll have to try these muffin mixes. Nice job!

Thanks for commenting! I just use this site as a way to keep track of recipes, and you are SO welcome to take anything you like here. If you try one that I haven't, please comment on it and let me know how it was...I was losing track of recipes and thought this was a good way to keep them filed.
