Stuff to put in the lettuce
I used red pepper, tomato, shredded carrot
and the Perdue Short Cuts...they are gluten free (yay!!)
And the best ingredient... Thai Kitchen Peanut Satay Sauce... so good, it is great on chicken as a sandwich spread..frankly it rocks.
Put all ingredients in lettuce..smother with sauce, and eat.

I love green wraps and greenwiches! In fact, I bought some organic red butter lettuce today - for this very purpose.

I was a healthy eater before becoming gluten free..but I never ate a burger or any sandwich on lettuce until I ate gluten free. And I love it. It's pretty wild how used to it you can get.

Heyyyy- I didn't know Thai kitchen Peanut Satay was gluten free- I always make my own! Way cool, I'll have to pick some up. Looks like a tasty meal!

Sea - Isn't that funny? I find out some products are gluten free and I get so excited. I was pumped when I found this...esp. since I lent out my Thai cookbook, and I don't remember who has it!! :)

MMMM!!!!! Sounds good! I love using lettuce as a "wrap". I eat all my sandwiches that way now. This looks like a yummy dinner :D
