However, there is an incredibly good reason for them being included in this: the need to be gluten free. If you are gluten sensitive or have celiacs and still want to bake (which you absolutely can) you need to learn your alternative flours. I've found I prefer just straight brown rice flour (w/ the xanthan of course) The addition of starch doesn't make enough of a difference to me for the hassle.
